If you're living somewhere rural, you might want to try taking a trip to somewhere effective a bigger town or city and having a shopping spree at a form food store. They carry frequent things that are labelled gluten-free, such as cookies and bread, that you can make available to a fussy toddler in a pinch when you don't hold anything else around. You can also stock up on things like rice pasta, and non-gluten flours such as rice, tapioca, etc, for baking.

You can also replace regular milk next to rice milk (they even have chocolate flavoured rice milk), or soy milk, but rice milk is better for children than soy. Rice and soy milk can also be used as replacements surrounded by any recepie that calls for regular milk, and strength food stores usually carry a margarine that does not contain any dairy. (All though if you're really tolerant and read the ingredient labels of every margarine at your regular grocery store, you should know how to find at least one of them i.e. completely free of dairy.)

If you can't make it somewhere that these things are availiable, you'll hold to be a bit more creative and come up with lots of ways to serve potatoes and corn and rice. Fortunately at hand are tons of recipes out at hand - I've linked to one expressly helpful website.

Above adjectives, make sure that doesn`t matter what you and your family are intake, that there is a "replacement" for your toddler. If he see everyone eating bread, he's going to want some too, so its best to hold a gluten-free version lying around of anything the rest of you are ingestion. (And if you can afford it, you should try going gluten/dairy free with him for the things you munch through together, so that he doesn't feel resembling he's missing anything.)

Good luck! I was on a gluten/dairy free diet for almost 10 months, and I know how offensive it can be. Feel free to message me if you have any more question concerning this topic!
